Pizza and a Movie

My husband and I love pizza, but hate waiting for delivery and don’t always feel like driving to get it. What’s a person to do? I mean, of course it’s obvious — make your own. We made the decision recently to make our own pizza. We are trying to eat healthy and it was a way to choose what we put into our mouths.

We chose fresh and some pre-made ingredients, but you can totally use all fresh. I’ve always liked the bite that fresh spinach gives to pizza so of course we had to have it on our pizza. We also wanted bell peppers, onions (I love onions). The mushrooms and black olives were canned and bought from my local Food Lion store.

I preferred Boboli because the crust was thick, which is the kind of crust we like and it was available at grocery store. I bought the Inspirations Neapolitan pizza sauce on sale. It was a closeout item and only cost me 78 cents. I bought two jars.

We chose a pizza cheese blend and a pre-made pizza crust that only took 10 minutes to bake. The only effort really was chopping the vegetables.

Creating a family pizza night doesn’t have to be hard or expensive. We made two pizzas and had plenty of leftover sauce for two more pizzas later in the week.  We had a couple of slices and watched a great movie on Netflix.

Make Your House Smell Like Fall

Fall to me is not only about the cool weather and the comfort foods, but the smells. The smell of pumpkin, hot apple cider, and cinnamon — it all puts me in a fall mood.

You know when you walk into a home and it smells cozy, have you ever wondered how they do it? Well I recently turned my house into a cozy, fall oasis. I used some ingredients I had on hand to infuse citrus with a light earthy scent. It smells so good that I wanted to share it with you.

Some of the ingredients you may have in your pantry, but if you don’t they aren’t that expensive. There are lots of recipes available online, but I chose to use orange and lemon, cinnamon and whole cloves and bay leaves as my key ingredients.

This is truly what you make of it. I mean instead of using lemon and orange peels you could substitute a gala apple and you could take out the bay leaves and use fresh rosemary. Or if you want your home to smell like pumpkin use pumpkin pie spice, nutmeg and cinnamon.

I took my ingredients and filled a large pot with water and let it boil. Once it struck a good boil then I let it simmer on low. Make sure you watch your pot because the water will eventually boil out, but all you have to do is fill it back up.

You can reuse your simmer pot concoction, just store it in your fridge in a closed container for up to one week.

Blogger Bonus: For apple juice, cranberry juice, herbs and spices that are outdated, don’t throw them out just add to them to your simmering pot.

Pumpkin Spice & Everything Nice

I accidentally discovered the greatest thing I’ve eaten since….well I can’t remember when. I’ve put it on whole grain toast and apples, and in yogurt and muffins. It’s so creamy and decadent that I even eat it with a spoon.

What is this creamy decadence you ask? I’m glad you asked. It’s pumpkin spice cookie butter. I am in heaven. I can’t get enough because it combines two loves — cookies and pumpkin.

It’s much like Trader Joe’s Speculoos cookie butter, which is essentially made from everything unhealthy. Actually it’s pretty simple — cookie crumbs, oil, flour, sugar, and milk. There’s other stuff in there too.

I found this small jar of magical goodness at my local Food Lion, which is featuring pumpkin everything through November.

Basically it’s like peanut butter, but better. Everything you could imagine eating with peanut butter just substitute cookie butter. Here’s how I used Nuccina pumpkin spice cookie butter:

Mix it up

I first of course tried scooped a heaping spoonful of cookie butter because I wanted to just try it by itself. I didn’t want to take away from the flavor by adding all sorts of stuff. It is indeed good all on its own. But then I then I wondered how would it taste with my morning vanilla yogurt.

I usually eat yogurt plain and on occasion with some fruit. I mixed a dollop of cookie butter in with vanilla yogurt and to take the pumpkin flavor to the next level I sprinkled in some pumpkin flavored granola. It was heavenly.

I love a good pumpkin flavored tea, but what about coffee? So I thought why not try it in my coffee. While the coffee was piping hot I swirled a scoop of cookie butter in it and added my hazelnut creamer. It was heavenly.

The way I mostly ate the pumpkin cookie butter is in a thin layer on toasted whole wheat bread. It was just enough to satiate my sweet tooth and the whole wheat toast made me feel as if I was sorta eating healthy. While the toast was still hot I would spread a nice amount of cookie butter onto the bread. It melted perfectly.
